Saigon → Can Tho → Hau River Cruise
~3.5h drive southwest into the delta. Check in at a riverside hotel in Can Tho, then an afternoon wooden-boat cruise on the Hau River past floating houses, water-hyacinth backwaters, and riverside fishing villages. Dinner of fresh river fish in Can Tho.

Cai Rang Floating Market → Ben Tre → Coconut Farm
Pre-dawn (5:30 AM) boat to Cai Rang, one of the delta's largest wholesale floating markets. Transfer to Ben Tre and switch to a narrow sampan through shaded coconut-palm canals; visit a hand-made coconut-candy workshop and pass working brick kilns. Riverside-garden lunch before returning to Can Tho.

Vinh Long → My Tho → Saigon
Boat to Vinh Long's orchard islands (rambutan, longan, mangosteen), the smaller Cai Be floating market by a 19th-century riverside church, and finally My Tho on the Tien River. Private van back to HCMC (~2h), arriving late afternoon.

Yes - Cai Rang is a working wholesale market and it's in full swing between about 5:30 and 8:00 AM, with boats piled with fruit trading on the water. The early start is exactly why you see the real thing rather than a staged version. You can nap on the boat afterwards.
Won't three days in the Mekong Delta feel repetitive?
Each day covers a different corner of the delta - Can Tho and the wide Hau River, then the narrow Ben Tre coconut canals by sampan, then the quieter orchard islands of Vinh Long and Cai Be. Three days lets you feel the delta's rhythm rather than just tick a floating market off a list.
